Ingredients
- 2 garlic cloves, peeled
- 3 to 4 anchovy fillets
- ½ teaspoon salt
- 2 tablespoons lemon juice
- 1 large egg or 2 tablespoons mayonnaise
- 1 teaspoon Worcestershire sauce
- ½ cup extra-virgin olive oil
- Salt and black pepper
- 2 heads romaine lettuce, torn into bite-sized pieces
- 1 Croutons (opens in new tab)
- Grated Parmesan to taste

Gather these ingredients - no prep needed yet.

Step 1.
Mince and mash together with the flat side of a knife until a paste is formed: 2 garlic cloves, peeled; 3 to 4 anchovy fillets; ½ teaspoon salt

Transfer the paste to a large bowl and whisk in: 2 tablespoons lemon juice; 1 large egg or 2 tablespoons mayonnaise; 1 teaspoon Worcestershire sauce

Step 3.
Add in a slow, steady stream, whisking constantly: ½ cup extra-virgin olive oil

Step 4.
Season the dressing to taste with: Salt and black pepper

Step 5.
Add to the bowl: 2 heads romaine lettuce, torn into bite-sized pieces; Croutons

Step 6.
Toss together with the dressing and transfer to a serving bowl or individual plates. Sprinkle with: Grated Parmesan to taste
