Step 1.
In a heavy-bottomed pan over medium-low heat, cook 3 tablespoons unsalted butter until the milk solids separate and turn golden brown, about 10 minutes. Remove the pan from the heat immediately to prevent burning.

In a medium bowl, sift 1½ cups (180 grams) confectioners' sugar and add a pinch of kosher salt. Slowly stir in the brown butter and 1 to 2 tablespoons milk or water, a little at a time, until the glaze is smooth and pourable. The glaze will firm up quickly, so use it while warm or reheat for 10 to 20 seconds in the microwave before using.

Step 3.
Dip the top of each doughnut into the glaze, gently shaking to remove excess. For an allover glaze, flip and dip the other side as well. Let the glaze set for 5 to 10 minutes before serving.
