Spatchcock or split: Two 1 ½- to 1 ¾-pound Cornish hens

Brush the skin with: 2 tablespoons melted butter or vegetable oil

Rub on both sides with: ¾ teaspoon salt; ½ teaspoon black pepper

Place the hens skin side down on a rack set over a large baking sheet. Broil until starting to brown, 10 to 13 minutes. Turn the hens skin side up and broil until browned, 8 to 10 minutes more. Let rest, tented with foil, for 10 minutes before serving.
