A classic bread pudding made with stale white bread, eggs, milk, and warm spices, baked until set and served warm with whipped cream.

Ingredients

Servings:
  • 12 to 16 ounces sliced white bread, stale but not hard
  • (¾ cup raisins or other dried fruit)
  • 4 large eggs
  • 3 cups whole milk
  • ¾ cup sugar
  • 1 teaspoon vanilla
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon grated or ground nutmeg
  • Pinch of salt

    • (2 teaspoons to 2 tablespoons sugar, 1 to 4 tablespoons sifted powdered sugar, or 2 teaspoons honey, to taste)
    • (½ teaspoon vanilla)

Beat in a large bowl (chill the bowl if your kitchen is very warm) with a hand mixer or balloon whisk or in a stand mixer set at medium-high speed, until stiff and billowy but not grainy: 1 cup cold heavy cream; (2 teaspoons to 2 tablespoons sugar, 1 to 4 tablespoons sifted powdered sugar, or 2 teaspoons honey, to taste); (½ teaspoon vanilla)

Let's Cook

  1. Step 1.

    Butter a 2-quart baking dish. Trim the crusts and cut into ½-inch cubes: 12 to 16 ounces sliced white bread, stale but not hard

  2. Step 2.

    You should have 5 lightly packed cups. Spread the bread in the prepared baking dish. If desired, scatter over the top: (¾ cup raisins or other dried fruit)

  3. Step 3.

    Whisk together thoroughly in a large bowl: 4 large eggs; 3 cups whole milk; ¾ cup sugar; 1 teaspoon vanilla; ¾ teaspoon ground cinnamon; ¼ teaspoon grated or ground nutmeg; Pinch of salt

  4. Step 4.

    Pour the mixture over the bread and let stand for 30 minutes, periodically pressing the bread down with a spatula to help it absorb the liquid.

  5. Step 5.

    Preheat the oven to 350°F.

  6. Step 6.

    Bake the pudding in a water bath until a knife inserted in the center comes out clean, 55 minutes to 1 hour. Serve warm with: Whipped Cream or cream
