  • 4 cups shelled fresh (about 4 pounds in the pod) or frozen lima beans
  • 2 tablespoons butter or olive oil
  • 1 teaspoon salt
  • 1 tablespoon lemon juice

    Place in a large skillet and add water to barely cover: 4 cups shelled fresh (about 4 pounds in the pod) or frozen lima beans; 2 tablespoons butter or olive oil; 1 teaspoon salt

  2. Step 2.

    Bring to a boil, then cover, reduce the heat, and simmer until tender, 25 to 35 minutes depending on the age of the beans. Check the beans periodically and add a little water if needed. Stir in: 1 tablespoon lemon juice; 1 tablespoon chopped parsley, chives, or dill
