Boiled Lobster

Live lobsters boiled in heavily salted water until bright red, then served with melted butter and lemon wedges. A straightforward method for cooking multiple batches, though steaming is generally preferred.

Gather these ingredients - no prep needed yet.
- 1 tablespoon salt
- 1½- to 2½-pound live lobsters
- Melted butter
- Lemon wedges
Let's Cook

Step 1.
Place in a large heavy pot enough water so the lobsters will be, completely covered when you plunge them in. Add for each quart of water: 1 tablespoon salt

Bring the water to a rolling boil. Carefully immerse, head first because of splashing: 1½- to 2½-pound live lobsters

Cover, weight the lid, and allow the water to return to a boil. Reduce the heat at once and simmer the lobsters about 8 minutes for 1 ½-pound lobsters, plus about 3 minutes for each additional pound, until they turn bright red. Drain.

Serve with: Melted butter; Lemon wedges
