Blueberry Whoopie Pies

Prepare

Step 1.
Preheat oven to 375°F. Line 3 large baking sheets with parchment paper. In a medium bowl, whisk together flour, baking powder, salt, and baking soda; set aside.

Using an electric mixer, beat butter, granulated sugar, brown sugar, and lemon zest in a large bowl on medium speed until light and fluffy, 2 to 3 minutes. Beat in the egg. Alternately add the flour mixture and buttermilk, beginning and ending with the flour mixture, mixing until just incorporated. Fold in the blueberries gently.

Scoop cookies (1½ tablespoons each) onto the prepared baking sheets, spacing them 2 inches apart. Bake in batches until puffed and tops spring back when lightly pressed, 12 to 14 minutes. Let cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.

While the cookies cool, make the filling: Using an electric mixer, beat mascarpone, lemon zest, confectioners' sugar, buttermilk, and salt in a large bowl on medium speed until blended, about 1 minute.

Assemble the whoopie pies: Spread filling onto the flat side of half the cookies, dividing evenly, then top with the remaining cookies. Store in an airtight container for up to 2 days.
