Step 1.
Preheat the oven to 375°F. Lightly grease a 9-by-13-inch baking dish with vegetable oil.

In a large mixing bowl, add 5 slices white bread and pour ½ cup whole milk over them. Let the bread soak up the milk for a minute or two until saturated.

Add 2 pounds 80/20 ground beef, ½ cup chunky mild salsa, ¼ cup chopped green onions, 1 egg, 2 teaspoons seasoning salt, and 1 teaspoon garlic powder to the bowl with the soaked bread. Mix everything together with your hands or a sturdy spoon until well combined.

Shape the meat mixture into a loaf shape (about 9x5 inches) and place it in the prepared baking dish. Bake uncovered for 45 minutes.

Remove the meatloaf from the oven. Spread ¼ to ½ cup ketchup evenly over the top and sides of the meatloaf. Return to the oven and bake uncovered for another 20 to 25 minutes, until the edges are browned and the internal temperature reaches 160°F.
