Barbecue Ribs
Tender St. Louis-style ribs cooked in an Instant Pot, then finished on the grill with a sweet and spicy barbecue glaze. A quick and flavorful way to enjoy barbecue ribs.

- 118 ml barbecue sauce

- 1 2½- to 3½-pound rack St. Louis–style ribs, membrane removed

Step 1.
In a medium bowl, combine the brown sugar, paprika, oregano, cayenne, and ¾ teaspoon salt. Rub the spice mixture all over the rack of ribs, coating evenly. Cut the rack into 4 pieces (about 5 ribs per piece).

Step 2.
Place the steamer rack or basket in the bottom of an Instant Pot and add ½ cup water. Arrange the rib pieces on top of the rack, stacking if needed. Lock the lid, set to high pressure, and cook for 35 minutes. Once done, use the quick release method to release the pressure, then carefully open the lid.

Step 3.
While the ribs cook, prepare the grill if using the optional step: heat the grill to medium-high. When the ribs are done, transfer them to the grill, meaty side up, and brush with ½ cup barbecue sauce. Cover and grill for 3 minutes. Turn the ribs, brush with more sauce, and continue grilling, turning and brushing occasionally, until charred and glazed in spots, 3 to 5 minutes more. Serve with additional barbecue sauce on the side.
