- 1 large ripe banana, mashed
- 1 egg, lightly beaten
- Melt 29.6 ml unsalted butter

Step 1.
In a large bowl, combine 1 cup all-purpose flour, 2 tablespoons dark brown sugar, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, and 1/2 teaspoon kosher salt. Whisk until well combined, then set aside.

In a separate medium bowl, combine 1 large ripe banana (mashed), 1 cup buttermilk, 1 lightly beaten egg, 2 tablespoons melted unsalted butter, and 2 teaspoons vanilla extract. Use a handheld mixer to mix until incorporated.

Make a small well in the center of the dry ingredients and pour in the wet ingredients. Use a handheld mixer to mix until just combined. Sprinkle in 1/4 cup chopped pecans and fold into the batter. Set aside.

Lightly oil a medium-size skillet with vegetable oil and place over medium heat. When the skillet is hot, pour in about 1/2 cup of the pancake batter. Cook until the edges are golden and bubbles form on the surface, about 2 minutes. Flip the pancake and cook for 2 more minutes. Repeat with remaining batter. Serve with your favorite toppings.
