Baked Stuffed Jumbo Shrimp

4 servings We call for two different sizes of shrimp because it is cheaper to buy smaller shrimp for the stuffing mixture. However, if you wish to simplify your grocery list, just buy more jumbo shrimp.
Ingredients
- 2 pounds shell-on shrimp (16⁄20 or larger)
- 1 Stuffing for Baked Stuffed Lobster, using fresh bread crumbs instead of browned and 6 tablespoons melted butter instead of olive oil (opens in new tab)
- 4 ounces small shrimp, peeled and chopped
- Dry white wine or chicken stock or broth

Step 1.
Position a rack in the upper third of the oven. Preheat the oven to 450°F. Butterfly: 2 pounds shell-on shrimp (16⁄20 or larger)

Prepare: Stuffing for Baked Stuffed Lobster, using fresh bread crumbs instead of browned and 6 tablespoons melted butter instead of olive oil

Stir in: 4 ounces small shrimp, peeled and chopped

Arrange the large shrimp in a single layer in a shallow baking dish and top with the stuffing, pressing it lightly so it adheres. Pour around the shrimp, just enough to cover the bottom of the baking dish: Dry white wine or chicken stock or broth

Bake until the shrimp are piping hot, 10 to 12 minutes. Serve immediately.
