Classic baked russet potatoes with flaky interiors, served with optional toppings like butter, sour cream, chives, and crisp bacon. Simple to prepare and perfect as a side dish.

Ingredients

  • Russet potatoes
  • 1
    • ¼ to 1 cup firmly packed finely grated cheese (1 to 4 ounces)
    • Salt to taste
    • Pinch of cayenne pepper or hot paprika
    • Pinch of grated or ground nutmeg or mace
    • (A few drops of dry white wine or lemon juice)
    Sub-recipe steps
    1. Prepare: White Sauce I
    2. When it is smooth and hot, reduce the heat to low and stir in: ¼ to 1 cup firmly packed finely grated cheese (1 to 4 ounces)
    3. Cook, stirring, just until the cheese is melted, or the cheese may turn stringy. Season with: Salt to taste; Pinch of cayenne pepper or hot paprika; Pinch of grated or ground nutmeg or mace
    4. Should the sauce become stringy, bring it just to a simmer and whisk in: (A few drops of dry white wine or lemon juice)
    5. then remove from the heat.

    • 2 tablespoons vegetable oil
    • 1 pound yellow, red, white, or sweet onions, halved and thinly sliced or cut into ½-inch or larger dice
    • Salt and black pepper
    Sub-recipe steps
    1. Heat in a large skillet over medium-high heat: 2 tablespoons vegetable oil
    2. Add and cook, stirring frequently, until lightly browned around the edges, 10 to 15 minutes: 1 pound yellow, red, white, or sweet onions, halved and thinly sliced or cut into ½-inch or larger dice
    3. Season well with: Salt and black pepper

    • 3 tablespoons New Mexico, guajillo, or ancho chile powder, or a combination
    • 4 garlic cloves, minced
    • 2 tablespoons cider vinegar
    • 1 tablespoon dried oregano
    • 2 teaspoons salt
    • (1 teaspoon chipotle chile powder)
    • ½ teaspoon ground cumin
    • ½ teaspoon ground allspice
    • ¼ teaspoon ground cloves
    • 1 poblano pepper
    • 2 to 4 serrano peppers
    • ⅓ cup pumpkin seeds, toasted
    • ¼ cup finely chopped cilantro stems
    Sub-recipe steps
    1. Prepare Country Sausage I or II, substituting the following mixture for the ice/water, salt, herbs, and spices: 3 tablespoons New Mexico, guajillo, or ancho chile powder, or a combination; 4 garlic cloves, minced; 2 tablespoons cider vinegar; 1 tablespoon dried oregano; 2 teaspoons salt; (1 teaspoon chipotle chile powder); ½ teaspoon ground cumin; ½ teaspoon ground allspice; ¼ teaspoon ground cloves
    2. GREEN
    3. We are confident that those who try this less-common chorizo will be instant converts.
    4. Roast: 1 poblano pepper; 2 to 4 serrano peppers
    5. Peel and seed the peppers and place on a cutting board along with: ⅓ cup pumpkin seeds, toasted; ¼ cup finely chopped cilantro stems
    6. Chop these ingredients together until finely minced. Prepare Red Chorizo, above, substituting this roasted pepper/pumpkin seed mixture for the 3 tablespoons chile powder.

  • 1 Chopped chives, thinly sliced green onion, Sautéed Onions, or Crispy Fried Shallots
  • Minced parsley or cilantro
  • 1 Crisp bacon or browned Fresh Chorizo Sausage, drained and crumbled

Let's Cook

  1. Step 1.

    Preheat the oven to 400°F. Scrub: Russet potatoes

  2. Step 2.

    Pierce them in 6 or 8 places with a fork and place the potatoes directly on the oven rack. Bake until tender when pierced with a fork, 40 to 60 minutes, depending on size. If you wish to do so for your diners, cut a slit in each potato and fluff up the interior by squeezing on both sides and working with a fork. Serve at once topped with any of the following: Butter, sour cream, or Sauce Mornay; Chopped chives, thinly sliced green onion, Sautéed Onions, or Crispy Fried Shallots; Minced parsley or cilantro; Crisp bacon or browned Fresh Chorizo Sausage, drained and crumbled
