Preheat the oven to 375°F. Grease a 2-quart casserole or similar baking dish with butter or nonstick spray.

In a large bowl, toss the sliced apples with ¾ cup granulated sugar, 1 tablespoon flour, and ½ teaspoon ground cinnamon until evenly coated. Transfer the apple mixture to the greased dish and spread into an even layer.

In a separate bowl, combine ½ cup rolled oats, ½ cup brown sugar, ½ cup flour, a pinch of salt, ⅛ teaspoon baking soda, and ½ teaspoon baking powder. Cut in ¼ cup (½ stick) cold butter using your fingers or a pastry blender until the mixture forms coarse crumbs. Sprinkle the topping evenly over the apples.
