Let's Cook

  1. Step 1.

    In a shallow dish, whisk together 1 large egg, 150 g egg whites, 100 ml skimmed milk, a pinch of cinnamon, and a splash of vanilla extract until fully combined and slightly frothy.

  2. Step 2.

    Dip each of the 3 slices of whole-grain bread into the egg mixture, allowing it to soak for about 10 seconds per side so the bread absorbs the custard without becoming soggy.

  3. Step 3.

    Heat a non-stick pan over medium heat. Cook the soaked bread slices for 2–3 minutes per side, until golden brown and cooked through. Set aside on a plate.

  4. Step 4.

    While the French toast cooks, in a small saucepan combine the diced apple, a sprinkle of cinnamon, and a splash of water. Cook over medium heat, stirring occasionally, for 4–5 minutes until the apple is softened and the water has evaporated.

  5. Step 5.

    Cut the cooked French toast into bite-sized pieces and place them in a bowl.

  6. Step 6.

    Top the toast pieces with 150 g Greek yogurt, the warm cinnamon apple, and 10 g almond butter. Serve immediately.
