1 ½ to 2 cups Any bean can be turned into a delicious and easy appetizer or sandwich spread. Use the flexible recipe below to get creative. For instance, pair white beans with paprika, dill, and a cooked beet or chickpeas with cumin and chipotles in adobo.

Ingredients

Servings:
  • One 15-ounce can beans, drained and rinsed, or 1 ½ cups cooked beans
  • ¼ cup olive oil
  • 1 to 2 garlic cloves, if not using roasted garlic
  • ½ teaspoon salt
  • (¼ cup pesto, for chickpeas or white beans)
  • (1 roasted red pepper, jarred or homemade)
  • (1 medium beet, cooked, peeled, and chopped)
  • (2 medium carrots, cooked and chopped)
  • (¾ cup chopped cooked winter squash)
  • 1
    • 4 large heads garlic
    • 2 tablespoons olive oil
    • Garlic cloves, unpeeled, excess skin removed
    Sub-recipe steps
    1. Preheat the oven to 400°F. To expose the cloves, cut the top third from: 4 large heads garlic
    2. Drizzle over the cut portions of the heads: 2 tablespoons olive oil
    3. Wrap each head tightly in foil, place in a baking dish, and bake until the garlic is soft and tender, about 45 minutes. Serve hot or at room temperature.
    4. QUICK PAN-ROASTED GARLIC CLOVES
    5. This method produces a firmer result with a toasty flavor. Pan-roasting is ideal for mellowing out garlic before using in salsas or uncooked table sauces like Habanero-Citrus Hot Sauce.
    6. Place in a heavy skillet over medium heat: Garlic cloves, unpeeled, excess skin removed
    7. Let the skin of the cloves blacken, and then turn them. Repeat until the cloves have charred spots on all sides, about 15 minutes. Transfer to a cutting board and let cool.
  • (1 to 2 chipotle peppers in adobo sauce, seeded if desired)
  • (1 tablespoon minced herbs, such as dill, cilantro, thyme, chives, or parsley)
  • (1 teaspoon cumin, chili powder, curry powder, or paprika)
  • Pita or tortilla chips

  1. Step 1.

    Combine in a food processor: One 15-ounce can beans, drained and rinsed, or 1 ½ cups cooked beans; ¼ cup olive oil; 1 to 2 garlic cloves, if not using roasted garlic; ½ teaspoon salt

  2. Step 2.

    Add one or more of the following, if desired: (¼ cup pesto, for chickpeas or white beans); (1 roasted red pepper, jarred or homemade); (1 medium beet, cooked, peeled, and chopped); (2 medium carrots, cooked and chopped); (¾ cup chopped cooked winter squash); (Cloves from 1 head Roasted Garlic I); (1 to 2 chipotle peppers in adobo sauce, seeded if desired); (1 tablespoon minced herbs, such as dill, cilantro, thyme, chives, or parsley); (1 teaspoon cumin, chili powder, curry powder, or paprika)

  3. Step 3.

    Process until smooth, scraping down the sides of the bowl as needed. Serve with: Pita or tortilla chips; Crudités

    or use as a sandwich spread.
