Sautéed Veal Chops

Veal chops are seasoned and seared in butter until perfectly cooked, then served with an optional herb pan sauce.
Ingredients
- 4 rib or loin veal chops, 1 inch thick
- Salt and black pepper
- 2 tablespoons butter

Let's Cook

Step 1.
Pat dry: 4 rib or loin veal chops, 1 inch thick

Season with: Salt and black pepper

Melt in a large skillet over medium-high heat: 2 tablespoons butter

Add the chops and sear both sides, each about 2 minutes. Reduce the heat to medium and cook, turning once, until they register 120° to 130°F for rare to medium-rare, about 4 minutes more. For medium, cook 1 minute more or until 135°F. Transfer to plates and let stand. Serve as for Grilled or Broiled Veal Chops, or drain off most of the fat and prepare, if desired: (Herb Pan Sauce)
