  • 4 tsp Raspberry and Ginger Purée
  • 1 tbsp gomme
  • 1 tbsp lime juice
  • 1 tsp rosewater
  • ice cubes
  • 8 5/11 tbsp tonic water
  • 1 fresh raspberry
  • 1 pinch dried rose petals

Let's Cook

  1. Step 1.

    Combine 35ml gin, 4 tsp Raspberry and Ginger Purée, 1 tbsp gomme, 1 tbsp lime juice, 1 tsp rosewater, and a handful of ice cubes in a cocktail shaker. Shake vigorously for about 6 seconds until well chilled.

  2. Step 2.

    Fill a collins glass with fresh ice cubes. Strain the shaken cocktail into the glass, then top up with 125ml tonic water. Stir gently to combine.

  3. Step 3.

    Garnish with a fresh raspberry and a small pinch of dried rose petals placed on top of the drink. Serve immediately.
