- 75 ml clear honey
- fresh lavender flowers
- grated zest of 1 lemon
- 4 crème fraîche

- 4 large, ripe peaches, halved and pitted

Step 1.
Preheat the oven to 200°C/400°F/gas mark 6. Grease an ovenproof baking dish with a little butter.

Arrange the peach halves in the baking dish, cut-side up. Drizzle the honey evenly over the peaches, then sprinkle with the lavender flowers and lemon zest.

Bake the peaches for 15 minutes. Remove the dish from the oven and spoon the lavender caramel that has formed in the dish back over the peaches.

Return the dish to the oven and bake for another 5 minutes, until the peaches are softened and golden.

Serve the peaches immediately, topped with a large spoonful of crème fraîche and drizzled with the remaining lavender caramel from the dish.
