Garlicky Sautéed Spinach
A quick and healthy side dish of wilted spinach sautéed with garlic and lemon zest. Ready in just 10 minutes, it's a lighter take on the classic steakhouse spinach.

- 2 clove garlic, very thinly sliced
- 1 lemon zest, thinly sliced
- 1 bunch spinach, thick stems removed

Step 1.
Heat 2 tablespoons olive oil, 2 thinly sliced garlic cloves, and 1 thinly sliced strip of lemon zest in a large Dutch oven or skillet over medium heat. Cook, stirring occasionally, until the garlic is just beginning to turn golden around the edges, 1 to 2 minutes.

Step 2.
Add the large bunch of spinach (thick stems removed) to the pot. Season with ¼ teaspoon each kosher salt and pepper. Cook, tossing often with tongs, until the spinach begins to wilt, 1 to 2 minutes.

Remove the pot from the heat and continue to toss the spinach until all leaves are just wilted, 1 to 2 minutes more. Serve immediately.
