Let's Prepare

Collect

Gather these ingredients — no prep needed yet.

  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 1 tsp ground black pepper
  • 1 tsp white sugar
  • 3 cans beef broth
  • 1 1/4 cup water
  • 1/2 tsp dried parsley
  • 1/4 tsp dried thyme
  • 1 cup white wine
  • 1/2 lbs shredded mozzarella cheese

Prepare

  • Chop 4 onions
  • 1 French baguette, cut into 1/2 inch slices

Let's Cook

  1. Step 1.

In a large pot over medium heat, melt the butter. Add the chopped onions and sauté for 10 minutes, stirring occasionally, until the onions are tender and translucent.

  2. Step 2.

Stir in the flour, ground black pepper, and sugar, and cook for 1-2 minutes, stirring constantly, until the mixture forms a thick paste and coats the onions.

  3. Step 3.

Pour in the beef broth and water, then add the dried parsley and thyme. Bring to a simmer and cook for 10 minutes, stirring occasionally.

  4. Step 4.

After 10 minutes, stir in the white wine and continue to simmer for another 10 minutes, allowing the flavors to meld.

  5. Step 5.

While the soup simmers, preheat the oven to broil. Slice the French baguette into 1/2-inch thick slices.

  6. Step 6.

Ladle the soup into individual oven-safe bowls, filling them about 3/4 full. Place a slice of baguette on top of each bowl, then sprinkle generously with shredded mozzarella cheese.

  7. Step 7.

Place the bowls on a baking sheet and broil in the oven for 2-4 minutes, until the cheese is melted and bubbly. Serve immediately.
