Gather these ingredients — no prep needed yet.

  • butter
  • 44.4 ml milk
  • salt
  • pepper
  • 1 sprig parsley

Let's Cook

  1. Step 1.

    Crack 3 eggs into a bowl. Heat a nonstick pan over medium heat. (If you have a diner-style griddle or a stovetop griddle, use that instead.)

  2. Step 2.

    Add a couple pats of butter to the pan and let it melt. Meanwhile, add 3 tablespoons milk, salt, and pepper to the eggs and whisk vigorously until well combined and frothy.

  3. Step 3.

    When the pan is hot enough—test by flicking a drop of water; it should hiss and evaporate immediately—pour in the egg mixture. Let it cook undisturbed for about 1 minute, or until the bottom begins to set.

  4. Step 4.

    Using a spatula, gently push one edge of the omelet toward the center of the pan, tilting the pan to let the uncooked egg flow underneath. Repeat this process around the omelet until no more liquid egg remains. Flip the omelet over (use two spatulas if needed) and cook for another 5 seconds, until the top looks cooked.

  5. Step 5.

    If desired, add fillings such as grated cheese, cooked mushrooms, or green pepper to one half of the omelet. (Palace prefers plain eggs.)

  6. Step 6.

    Slide half of the omelet onto a plate, then fold the other half over it. Garnish with a sprig of parsley.
