12 crêpes The apples, which can be refrigerated for a week, are delicious on any pancake or waffle. If desired, make the crêpes and apples up to 2 days ahead of time.

    • Jam or preserves
    • 3 tablespoons butter, melted
    • Powdered sugar
    Sub-recipe steps
    1. Prepare: 12 Sweet Crêpes
    2. Have ready 4 cups of one of the following or a combination: Any fruit, poached, roasted, or sautéed; Any flavor Pastry Cream; Whipped Cream; Applesauce; Jam or preserves; Lemon Curd; Chocolate Ganache
    3. Spread 3 to 4 tablespoons of filling in the center of the pale side of each crêpe, leaving a 1-inch border all around, then roll up the crêpes. Arrange seam side down on a serving platter. Brush with: 3 tablespoons butter, melted
    4. Dust with: Powdered sugar

  • 3 tablespoons light corn syrup
  • 1 tablespoon light brown sugar
  • 1 tablespoon lemon juice
  • 3 medium Golden Delicious apples, peeled, cored, and cut into 12 wedges each
  • 2 tablespoons cold butter
  • 3 tablespoons butter, melted
  • 1
    • 1 cup cold heavy cream
    • (2 teaspoons to 2 tablespoons sugar, 1 to 4 tablespoons sifted powdered sugar, or 2 teaspoons honey, to taste)
    • (½ teaspoon vanilla)

    1. Beat in a large bowl (chill the bowl if your kitchen is very warm) with a hand mixer or balloon whisk or in a stand mixer set at medium-high speed, until stiff and billowy but not grainy: 1 cup cold heavy cream; (2 teaspoons to 2 tablespoons sugar, 1 to 4 tablespoons sifted powdered sugar, or 2 teaspoons honey, to taste); (½ teaspoon vanilla)
    2. Use immediately.

  • 1 tablespoon light brown sugar
  • 1 tablespoon lemon juice
  • 3 medium Golden Delicious apples, peeled, cored, and cut into 12 wedges each
  • 2 tablespoons cold butter
  • 3 tablespoons butter, melted
  • 1 (Whipped Cream or vanilla ice cream)

Let's Cook

  1. Step 1.

    Prepare: 12 Sweet Crêpes

  2. Step 2.

    Set aside. Combine in a small saucepan: 1 cup apple cider; 3 tablespoons light corn syrup; 1 tablespoon light brown sugar; 1 tablespoon lemon juice

  3. Step 3.

    Simmer over medium heat until the mixture is reduced by half, about 10 minutes. Stir in: 3 medium Golden Delicious apples, peeled, cored, and cut into 12 wedges each; 2 tablespoons cold butter

  4. Step 4.

    Continue to simmer until the apples are tender and the syrup is very thick, about 15 minutes.

  5. Step 5.

    Preheat the oven to 350°F. Line a large baking sheet with parchment paper.

  6. Step 6.

    Have ready: 3 tablespoons butter, melted

  7. Step 7.

    Brush the crêpes lightly with the butter and arrange on the prepared baking sheet, overlapping as necessary. Bake until warmed through, about 5 minutes. Fill the crêpes with the apples and sauce. If desired, top with: (Whipped Cream or vanilla ice cream)
