Bacon-Wrapped Stuffed Jalapeños

- Soften 8 oz cream cheese

Step 1.
Preheat the oven to 375°F. Line a baking sheet with aluminum foil for easier cleanup, then fit a wire rack on top.

Cut off the stems from 6 jumbo jalapeños and discard them. Cut each jalapeño in half lengthwise. Using a small spoon, scoop out all the seeds and discard them. Rinse the jalapeño halves under cool water to remove any stubborn seeds.

Using the same spoon, stuff each jalapeño half with softened cream cheese (8 ounces total). Carefully wrap each stuffed half with bacon (1 pound total) to completely cover the cream cheese.

Place the wrapped jalapeños, cream cheese side up, on the prepared wire rack. Bake for 25 to 30 minutes, until the bacon is crisp. Serve hot.
