Gather these ingredients — no prep needed yet.

  • 1 tbsp butter
  • 3/4 lbs Ground pork
  • 3/4 lbs Ground beef
  • 2/3 cup fresh bread crumbs
  • 1 cup water
  • 2 egg yolks
  • 1 tsp salt
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1/4 tsp ground pepper
  • 4 tbsp butter
  • 2 tbsp flour
  • 2 cup beef stock

Prepare

  • 1 tbsp onions, finely minced

Let's Cook

  1. Step 1.

    Melt 1 Tbsp. butter in a small heavy skillet, add finely minced onions, and cook stirring until soft, about 1-2 minutes. Set aside.

  2. Step 2.

    In a stand mixer, combine bread crumbs and water (or milk). Let stand a few minutes until softened.

  3. Step 3.

    Add ground beef, ground pork, salt, black pepper, nutmeg, allspice, and the cooked onions. Beat on low speed until smooth, then on high until light and fluffy.

  4. Step 4.

    Using a scoop, shape mixture into 2-inch balls, keeping hands wet to prevent sticking. Place on parchment paper.

  5. Step 5.

    In a large skillet over medium heat, melt 1/4 cup butter. Cook meatballs in small batches until brown, then transfer to paper towels to drain.

  6. Step 6.

    After all meatballs are cooked, reduce heat to medium, add 2 Tbsp. flour to the same pan, and cook until lightly brown.

  7. Step 7.

    Slowly add 2 cups beef broth, stirring constantly, until a smooth gravy forms.
