A quick and flavorful Spanish rice made with turmeric, tomato, bell pepper, and fresh parsley. This vegetarian side dish is perfect with hot sauce.

Gather these ingredients — no prep needed yet.

  • 3 tbsp vegetable oil
  • 1/2 tsp turmeric
  • Kosher salt and freshly ground pepper
  • 1 1/2 cup white rice
  • Hot sauce

Prepare

  • Chop 1 small onion
  • Chop 2 clove garlic
  • Chop 1 medium tomato
  • Dice 0.5 red bell pepper
  • Chop 1 tbsp fresh parsley

Let's Cook

  1. Step 1.

    Heat the vegetable oil in a large, deep skillet over medium heat.

  2. Step 2.

    Add the onion, garlic and turmeric and cook until the onion is slightly softened, about 3 minutes.

  3. Step 3.

    Add the tomato and bell pepper and cook, stirring occasionally, until tender, about 5 minutes.

  4. Step 4.

    Sprinkle with 3/4 teaspoon salt, and pepper to taste.

    Add the rice, 2 cups water and 1/2 tablespoon parsley; bring to a boil.

  6. Step 6.

    Reduce the heat to medium low, cover and simmer until the rice is tender, 15 to 20 minutes.

  7. Step 7.

    Remove from the heat and sprinkle in the remaining 1/2 tablespoon parsley. Cover and let stand 5 minutes.

  8. Step 8.

    Fluff the rice mixture with a fork and incorporate any parsley. Season with salt and pepper.

  9. Step 9.

    Serve with hot sauce.
