  • Kosher salt and pepper
  • 2 boneless, skinless chicken breasts
  • 4 prosciutto

Prepare

  • 1 small acorn squash, peeled, seeded and sliced
  • Chop 1 tsp fresh thyme
  • Grate 1 tbsp Parmesan cheese

Let's Cook

  1. Step 1.

    Preheat the air fryer to 400°F. Peel, seed, and slice the acorn squash. In a bowl, toss the squash slices with 2 teaspoons olive oil, 1 teaspoon chopped fresh thyme, and ¼ teaspoon kosher salt.

    Place the seasoned squash in the air fryer basket. Air fry until tender, about 15 minutes, shaking the basket once halfway through. Transfer the cooked squash to a bowl and set aside.

    While the squash cooks, season 2 boneless, skinless chicken breasts with ¼ teaspoon black pepper. Sprinkle 1 tablespoon grated Parmesan cheese evenly over the chicken. Wrap each chicken breast with 2 slices of prosciutto, covering the surface.

  4. Step 4.

    Place the prosciutto-wrapped chicken in the air fryer basket. Air fry until the chicken is cooked through and reaches an internal temperature of 165°F, about 20 minutes.

  5. Step 5.

    After the chicken is cooked, place the reserved roasted squash on top of the chicken in the air fryer basket. Air fry for an additional 3 minutes, or until the squash is heated through. Serve immediately.
