Let's Cook
-
Step 1.
In a medium bowl, combine 1 cup mayonnaise, ½ cup buttermilk, and ½ cup sour cream. Stir until smooth. Add ½ cup blue cheese crumbles, 1 teaspoon Tabasco sauce, and ¼ teaspoon coarse black pepper. Mix until well combined. Cover and refrigerate the dressing for at least 2 hours.
-
Step 2.
In a small bowl, combine 1 teaspoon paprika, 1 teaspoon garlic powder, ½ teaspoon kosher salt, ½ teaspoon ground black pepper, and ½ teaspoon cayenne pepper. Stir to blend.
-
Step 3.
Place 1 pound thin-cut chicken breast on a plate and sprinkle the seasoning mix evenly over both sides. Set aside.
-
Step 4.
Heat a medium-size grill pan over medium heat. Drizzle in 2 tablespoons vegetable oil. Once the oil is hot and shimmering, add the seasoned chicken. Cook for 8 minutes per side, until the chicken is charred and cooked through (internal temperature reaches 165°F). Remove from the pan and let rest for 5 minutes, then thinly slice the chicken breast.
-
Step 5.
While the chicken cooks or rests, chop 4 romaine hearts, 2 roma tomatoes, ¼ cup green onions, 6 slices cooked bacon, 3 hard-boiled eggs, and 1 jumbo avocado. In a large bowl, add the romaine lettuce, then top with tomatoes, green onions, bacon, eggs, avocado, ½ cup croutons, and the sliced chicken. Serve with the chilled blue cheese dressing.
