Prepare

  • Thaw 454 g frozen chopped spinach
  • Mince 4 clove garlic
  • Soften 14.8 ml cream cheese

Let's Cook

  1. Step 1.

    Wrap the thawed frozen chopped spinach in cheesecloth and squeeze out all excess liquid. Set aside.

  2. Step 2.

    Place a large skillet over medium heat. Add the bacon slices and cook, flipping once, until crisp, 7 to 8 minutes. Transfer bacon to a paper-towel-lined plate to cool.

    Leave the rendered bacon fat in the skillet over medium heat. Add the butter and let it melt. Sprinkle in the flour and cook, stirring constantly, until the raw flour smell is gone, about 2 minutes.

    Pour in the half-and-half and stir until well combined with the flour mixture.

    Crumble the cooled bacon into the skillet. Add the minced garlic and softened cream cheese, stirring to incorporate. Sprinkle in the seasoning salt, onion powder, black pepper, red pepper flakes, and nutmeg. Stir, then bring the sauce to a boil. Reduce heat to medium and cook until the sauce thickens, 4 to 5 minutes.
