Let's Cook
-
Step 1.
Preheat the oven to 400°.
-
Step 2.
In a large bowl, combine 3 cups flour, 1/2 cup sugar, 2 1/2 tsp baking powder, 1 tsp salt, and 1/2 tsp baking soda. Mix in 1 tbsp grated orange peel.
-
Step 3.
Cut 3/4 cup chilled unsalted butter into 1/2 inch pieces, and mix into the flour using your fingers until the mixture looks like coarse meal.
-
Step 4.
Add 1 cup dried orange-flavored cranberries.
-
Step 5.
In a small bowl, combine 1/2 cup buttermilk, 1/2 cup orange juice, and 3 tsp orange cream yogurt.
-
Step 6.
Slowly add the liquid to the flour/butter mixture, mixing with a fork until you get moist clumpy dough.
-
Step 7.
Transfer the dough to a lightly floured surface. Knead about 4-6 times, just enough to bind the dough together.
-
Step 8.
Form the dough into a large log about 1 1/2 inches thick. Cut slices every 3 inches, then cut each piece diagonally to form triangular scones.
-
Step 9.
Lay the cut scones about 2 inches apart on a parchment-lined cookie sheet. Bake for 15-20 minutes at 400°.
-
Step 10.
While the scones are cooking, mix together 1/2 cup powdered sugar and 1-2 tbsp orange juice to make the glaze.
-
Step 11.
Drizzle the glaze lightly over the tops of the scones as they cool, when they're fresh out of the oven.
-
Step 12.
To make flavored butter, mix together 1/2 cup softened butter and 3 tbsp orange marmalade.
