A simple, horse-friendly treat made with oatmeal, carrots, and molasses. These cookies are baked until golden and firm.

- 1 cup flour
- 1 cup shredded carrots
- 1 tsp salt
- 1 tbsp sugar
- 2 tbsp vegetable oil

In a large mixing bowl, combine 1 cup oatmeal, 1 cup flour, 1 cup shredded carrots, 1 teaspoon salt, 1 tablespoon sugar, 2 tablespoons vegetable oil, ¼ cup molasses, and ¼ cup water. Stir until all ingredients are evenly incorporated and a stiff dough forms.

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.

Roll the dough into 1½-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart. Use the palm of your hand or the bottom of a glass to gently flatten each ball into a disc about ½-inch thick.

Bake the cookies in the preheated oven for 15 minutes, or until they are golden brown on the edges and firm to the touch. Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
