- 1 small red onion very finely sliced
- 1 tbsp red wine vinegar
- 1 tbsp pomegranate molasses
- 1 tsp honey
- 3 tbsp extra virgin olive oil

- 1/3 lbs feta cheese crumbled
- 10 fresh mint leaves

Prepare
- Halve 0.99 lb mixed cherry tomatoes
- 1 small red onion, very finely sliced
- 1/3 lbs feta cheese, crumbled

Step 1.
Halve the mixed cherry tomatoes and place them in a large bowl. Finely slice the red onion and add to the bowl.

In the same bowl, add the red wine vinegar, pomegranate molasses, honey, and extra virgin olive oil. Season with sea salt and freshly ground black pepper to taste, then mix everything well until evenly coated.

Transfer the dressed tomato and onion mixture to a serving dish. Sprinkle the pomegranate seeds, crumbled feta cheese, and fresh mint leaves over the top. Serve immediately.
