Wok-Fried Egg
A simple fried egg cooked in a wok until the edges are crispy, drizzled with soy sauce and served with toast. Inspired by Vietnamese cuisine.

- fresh cilantro chopped
- green onions chopped
- chili sauce
- 1 toast

- 1 large egg
- 1 tsp vegetable oil
- 1/2 tsp soy sauce
- chili sauce
- 1 toast
Prepare
- Chop fresh cilantro
- Chop green onions

Step 1.
In a small bowl, carefully crack the egg, being careful not to break the yolk.

Preheat a wok over medium heat for about 1 minute. Add the vegetable oil and heat for about 5 seconds, or until it starts to shimmer.

Pour the egg into the oil. Let the bottom brown for about 30 seconds, or until you see the edges of the egg white start to turn golden. Gently flip the egg.

Cook the egg yolk to desired doneness, 30 to 60 seconds. Meanwhile, prepare the toast and optional toppings.

Transfer the egg to a plate. Drizzle with the soy sauce; top with the cilantro, green onion, and chili sauce if using; and serve with the toast to soak up the yolk.
