WHOLE PRAWNS COOKED OVER SALT
Whole prawns are cooked over a bed of hot salt, then drizzled with olive oil. The dish is served with instructions to suck the juices from the heads and shells before peeling.

- 10 large red prawns (jumbo shrimp), whole in shell
- 2 tbsp olive oil

- 7/16 lbs flaky sea salt
- 10 large red prawns (jumbo shrimp), whole in shell
- 2 tbsp olive oil
Let's Cook

Step 1.
Evenly sprinkle 200g/7oz/1 cup flaky sea salt over a heavy frying pan or cast iron skillet. Heat the pan over high heat until the salt is hot, about 2 minutes.

Step 2.
Place 10 large whole red prawns (jumbo shrimp) in a single layer over the hot salt. Cook undisturbed for 2 minutes.

Carefully flip each prawn using tongs. Cook for another 1 minute on the second side.

Step 4.
Drizzle 2 tbsp olive oil over the cooked prawns. Remove the pan from heat.

Step 5.
To eat, gently pull the head from the body of each prawn and suck the juices from the head. Then suck on the shells of the bodies before peeling and eating the tails.
