Let's Prepare

Collect

Gather these ingredients — no prep needed yet.

  • 113 g thick-cut bacon
  • 473 ml low-sodium chicken broth
  • 118 ml dry white wine
  • 44.4 ml tomato paste
  • 4 sprig thyme
  • Crusty bread

Prepare

  • Drain 1 can petite diced tomatoes
  • Chop 1 medium onion
  • 8 garlic cloves, smashed
  • 907 g well-trimmed pork butt, trimmed and cut into 2-inch pieces
  • 118 ml brown lentils, rinsed and picked over
  • Rinse 1 can small white beans

Let's Cook

  1. Step 1.

Place the bacon on a paper towel–lined plate and microwave on high until crisp, about 4 minutes. Cut into 1-inch pieces.

  2. Step 2.

In a 5- to 6-quart slow cooker, whisk together the chicken broth, white wine, and tomato paste until smooth. Add the drained diced tomatoes, chopped onion, and smashed garlic cloves, and stir to combine. Fold in the pork butt pieces, bacon pieces, and thyme sprigs. Cover and cook until the pork is very tender and easily pulls apart, 5 to 6 hours on high or 7 to 8 hours on low.

  3. Step 3.

Thirty-five minutes before serving, discard the thyme sprigs. Gently stir in the rinsed lentils. Set the slow cooker to high (if not already), cover, and continue cooking until the lentils are just tender, 30 to 35 minutes. Gently fold in the rinsed white beans and cook until heated through, about 3 minutes. Serve with crusty bread if desired.
