White Bean Cassoulet With Pork & Lentils
A hearty slow-cooker cassoulet with tender pork, lentils, and white beans in a rich tomato broth. Perfect for a comforting meal.
Ingredients
- 1/4 lbs thick-cut bacon
- 2 cup low-sodium chicken broth
- 1/2 cup dry white wine
- 3 tbsp tomato paste
- 1 can petite diced tomatoes drained
- 1 medium onion chopped
- 8 garlic cloves smashed
- 2 lbs well-trimmed pork butt trimmed and cut into 2-inch pieces
- 4 sprig thyme
- 1/2 cup brown lentils rinsed and picked over
- 1 can small white beans rinsed
- Crusty bread

Prepare
- Drain 1 can petite diced tomatoes
- Chop 1 medium onion
- 8 garlic cloves, smashed
- 2 lbs well-trimmed pork butt, trimmed and cut into 2-inch pieces
- 1/2 cup brown lentils, rinsed and picked over
- Rinse 1 can small white beans

Step 1.
Place the bacon on a paper towel–lined plate and microwave on high until crisp, about 4 minutes. Cut into 1-inch pieces.

In a 5- to 6-quart slow cooker, whisk together the chicken broth, white wine, and tomato paste until smooth. Add the drained diced tomatoes, chopped onion, and smashed garlic cloves, and stir to combine. Fold in the pork butt pieces, bacon pieces, and thyme sprigs. Cover and cook until the pork is very tender and easily pulls apart, 5 to 6 hours on high or 7 to 8 hours on low.

Step 3.
Thirty-five minutes before serving, discard the thyme sprigs. Gently stir in the rinsed lentils. Set the slow cooker to high (if not already), cover, and continue cooking until the lentils are just tender, 30 to 35 minutes. Gently fold in the rinsed white beans and cook until heated through, about 3 minutes. Serve with crusty bread if desired.
