  • 2 tbsp lemon juice, freshly squeezed
  • 1 tsp maple syrup, pure
  • 1/2 tsp ginger, grated peeled fresh

    In a large bowl, combine 2 cups roughly chopped spinach, 2 cups cooked farro, 2 cups cooked chickpeas, 1 cup thinly sliced strawberries, 1 tablespoon extra-virgin olive oil, ¼ teaspoon sea salt, and ¼ teaspoon freshly ground black pepper.
