RANCH SCHOOL COCONUT-CHERRY GRANOLA
A homemade granola combining oats, coconut, walnuts, almonds, and dried cherries. It's a flexible, kid-friendly snack that can be customized with different dried fruits.

- Melt 2/3 cup coconut oil

Step 1.
Preheat the oven to 350°F and position a rack in the center. Line a baking sheet with parchment paper and set aside.

In a large mixing bowl, stir together 5 cups old-fashioned rolled oats, 1 cup walnuts, 1 cup unsweetened coconut chips, 1 cup unsweetened coconut flakes, ⅔ cup sliced almonds, 1 teaspoon fine sea salt, and 1 teaspoon ground cinnamon until well combined.

Add ⅔ cup melted coconut oil, ⅔ cup honey, and 1 teaspoon vanilla extract to the dry mixture. Stir until everything is very well coated.

Transfer the granola mixture to the prepared baking sheet and spread it into an even layer that reaches the edges of the pan. Pat it down firmly with a spatula or your hands.

Bake for 12 to 15 minutes, until the edges just begin to brown. Remove from the oven, stir the granola well, then pat it down into an even layer again.

Return to the oven and bake for another 15 minutes, or until the top is well browned. The granola will still be soft but will crisp as it cools.

Allow the granola to cool completely on the baking sheet, about 45 minutes. If you prefer fewer clumps, stir it occasionally as it cools.

Once cooled, break the granola into pieces of your desired size. Stir in 1½ cups dried cherries. Serve immediately or store in an airtight container at room temperature for up to 2 weeks, or freeze for up to 3 months.
