RAINBOW CAKE
Colorful doughnuts made with a three-color coupler for a rainbow effect. Glazed and topped with sprinkles, these treats are fun to make and eat.

Step 1.
Prepare the chosen cake dough as directed, but add all of the milk called for in the recipe to make the batter looser than usual. Do not rest the batter; instead, divide it into thirds.

Step 2.
Place the first third of batter in the mixer bowl and add ⅛ teaspoon of the lightest shade of gel food coloring. Mix on low speed until the color is well incorporated. Transfer the colored batter into a pastry bag fitted with a three-color coupler (with the tip and ring attached) and set aside. If needed, wipe the mixing bowl and beater clean before repeating with the next-lightest color, then the darkest color, transferring each to its own pastry bag attached to the coupler.

Step 3.
Attach the three pastry bags together via the coupler. Pipe the batter into doughnut pans or onto parchment for drop doughnuts, then fry or bake as directed. While the doughnuts are cooking, prepare the glaze of choice.

After the doughnuts have cooled slightly, glaze them and immediately top with sprinkles. Serve once the glaze is set.
