Makes 2 bowls What I love most about this bowl is the addition of sweet potato fries. Homemade fries are an easy way to include something crisp and savory in a bowl. You could also just make them on their own and use the creamy cashew dressing as a dip. Pairing them with the black beans and quinoa as a meal, however, will fill you up and provide a powerful energy boost.

Gather these ingredients — no prep needed yet.

  • 2 tbsp avocado oil
  • 1/2 tsp sea salt
  • 1/2 tsp freshly ground black pepper
  • 2 cup cooked black beans
  • 2 cup cooked quinoa
  • 1/2 cup Creamy Cashew Dressing

Prepare

  • Peel 2 sweet potatoes
  • 2 cup chard, roughly chopped
  • Chop 1/2 cup fresh cilantro
  • Dice 1/4 cup red onion
  • Slice 1 medium avocado

Let's Cook

  1. Step 1.

    Preheat the oven to 450°F. Peel the sweet potatoes and cut them into 4-inch-long sticks. In a large bowl, toss the sweet potato sticks with 2 tablespoons avocado oil, ½ teaspoon sea salt, and ½ teaspoon black pepper until evenly coated.

  2. Step 2.

    Arrange the seasoned sweet potato sticks in a single layer on a baking sheet. Bake for 15 minutes, then flip each stick with a spatula. Continue baking for another 20 minutes, until the fries are lightly browned and crisp on the outside but not overcooked. Remove from the oven and set aside.

  3. Step 3.

    While the fries bake, prepare the remaining ingredients: have the cooked black beans, cooked quinoa, chopped chard, chopped cilantro, diced red onion, sliced avocado, and Creamy Cashew Dressing ready.

  4. Step 4.

    To assemble each bowl, divide half of the black beans, quinoa, chard, cilantro, red onion, avocado slices, and sweet potato fries between two bowls. Drizzle each bowl with the Creamy Cashew Dressing and serve.
