Peach & Prosciutto Skewers

- Chop 1 tbsp fresh herbs
- 1 peach or nectarine, cut into 8 wedges

In a medium bowl, whisk together ¼ cup olive oil, 1 tablespoon red wine vinegar, 1 tablespoon chopped fresh herbs (such as basil, thyme, and oregano), ⅛ teaspoon red pepper flakes, and ¼ teaspoon kosher salt until combined.

Add 5 ounces bocconcini mozzarella (about 8 balls) to the bowl and turn to coat evenly with the marinade. Let sit at room temperature for 1 hour, or cover and refrigerate overnight.

When ready to serve, remove the mozzarella from the marinade. Cut 4 slices prosciutto in half lengthwise, then fold each strip accordion-style.
