Mint Sambol
A vibrant condiment made with fresh mint, coconut, and jalapeño. Perfect for adding a burst of flavor to rice pilaf or grilled meats.

- 1 tbsp fresh lime juice
- Kosher salt

- Chop 0.5 jalapeño
- Chop 1 clove garlic
- Chop small red onion
- 1/2 cup fresh mint leaves, packed

Step 1.
In a food processor, combine ¼ cup unsweetened shredded coconut, ½ chopped jalapeño, 1 chopped garlic clove, and ⅛ chopped small red onion. Pulse until the mixture resembles fine crumbs and begins to come together, about 10-15 pulses. If needed, add ½ to 1 tablespoon water and scrape down the sides of the bowl to help it combine.

Add ½ packed cup fresh mint leaves to the food processor and pulse until finely chopped, about 5-10 pulses.

Transfer the mixture to a bowl. Stir in 1 tablespoon fresh lime juice and ¼ teaspoon kosher salt until well combined. Let the sambol rest for 10 minutes to allow flavors to meld before serving.
