A quick and easy homemade mayonnaise made with an immersion blender. Rich, creamy, and customizable with garlic and Dijon mustard.

Gather these ingredients — no prep needed yet.

  • 1 large egg
  • 14.8 ml lemon juice
  • 4.93 ml Dijon mustard
  • 237 ml vegetable or canola oil
  • Kosher salt

Prepare

  • Mince 1 garlic

Let's Cook

  1. Step 1.

    Place egg, lemon juice, and mustard in the bottom of a cup or jar that just fits the head of your immersion blender.

  2. Step 2.

    Add garlic, if using.

  3. Step 3.

    Pour oil on top and allow to settle for 15 seconds.

  4. Step 4.

    Place head of immersion blender at bottom of cup and turn it on high speed. Do not pulse or move the head.

  5. Step 5.

    As mayonnaise forms, slowly tilt and lift the head of the immersion blender until all oil is emulsified.

  6. Step 6.

    Season mayonnaise to taste with salt.

  7. Step 7.

    Refrigerate in an airtight container for up to 2 weeks.
