Coriander-Maple Glazed Carrots
These coriander-maple glazed carrots are roasted on a preheated baking sheet for caramelized exteriors and tender interiors. Tossed with a bright lime and maple glaze, they make a flavorful side dish.

- Kosher salt and pepper
- 1/2 tbsp maple syrup
- 1/2 tsp grated lime zest
- 1 tbsp lime juice

- 3/4 lbs rainbow carrots, halved crosswise and thick ends quartered
- Crush 3/4 tsp whole coriander seeds

Step 1.
Heat the oven to 450°F. Place a rimmed baking sheet in the oven to preheat while you prepare the carrots.

Halve 12 ounces rainbow carrots crosswise, then quarter the thick ends lengthwise so all pieces are roughly the same size.

Carefully remove the hot baking sheet from the oven. Toss the carrots on the hot sheet with 1 tablespoon olive oil, then add ¾ teaspoon crushed whole coriander seeds and ⅛ teaspoon each kosher salt and black pepper.

Roast the carrots, tossing after 15 minutes, until golden brown and tender, 15 to 20 minutes total.

Immediately toss the hot roasted carrots with ½ tablespoon maple syrup, ½ teaspoon grated lime zest, and 1 tablespoon lime juice. Serve.
