- 1 whole chicken breast
- 2 split chicken breasts
- 2 large yams
- Oil

- Crush 1 clove garlic
- Crush 2 clove garlic

Step 1.
Coat a large frying pan with oil. Place 1 whole or 2 split chicken breasts skin side down in the center of the pan.

Cut 2 large yams (with skin on) into quarters and arrange them around the chicken in the pan.

Season the chicken and yams with salt, pepper, 1 teaspoon dried rosemary, and 1 or 2 cloves of crushed fresh garlic.

Place a lid on the pan and cook over medium heat for about 1 hour, or until the chicken is fully cooked through and the yams are tender. Turn the chicken once during cooking to brown all sides.

Transfer the chicken and yams to a platter. Pour the pan drippings over the top and serve.
