  • 2.46 ml ground black pepper
  • 473 ml mayonnaise

Prepare

  • Dice 1 large yellow onion
  • Dice 907 g roma tomatoes
  • Chop 29.6 ml fresh basil
  • Chop 4.93 ml fresh thyme
  • Shred 473 ml sharp cheddar cheese
  • Shred 237 ml Havarti cheese
  • Crush 2.5 Ritz crackers

Let's Cook

  1. Step 1.

    Preheat the oven to 350°F. Lightly oil a 9-by-13-inch baking dish with vegetable oil.

  2. Step 2.

    In a large sauté pan over medium-high heat, drizzle in the olive oil. Once the oil is hot, add the diced onion and cook until tender, 3 to 5 minutes, stirring occasionally.

    Add the diced tomatoes, chopped basil, kosher salt, chopped thyme, and black pepper to the pan. Stir to combine. Cook for 15 minutes, then turn off the heat and set the pan aside.

    In a large mixing bowl, combine the mayonnaise, shredded sharp cheddar, and shredded Havarti cheese. Set aside.

    In the prepared baking dish, sprinkle ⅓ of the crushed Ritz crackers (reserve 1 cup for the topping) evenly over the bottom. Pour half of the tomato mixture over the crackers. Repeat the layers with another ⅓ of the crackers and the remaining tomato mixture.

    Spread the mayonnaise-and-cheese mixture evenly over the top layer. Sprinkle the reserved 1 cup crushed Ritz crackers over the cheese mixture.

    Bake uncovered for 45 minutes. Remove from the oven and let sit for 15 minutes before serving.
