These fudgy brownies use mashed avocado instead of butter or oil, making them a healthier treat. They are rich, chocolatey, and surprisingly moist.

Step 1.
Preheat the oven to 350°F. Lightly coat an 8-inch square baking pan with nonstick cooking spray. Line the pan with parchment paper, leaving a 2-inch overhang on two opposite sides; spray the parchment paper as well.

Place the chopped dark chocolate in a small microwave-safe bowl. Microwave on 50% power in 30-second intervals, stirring between each, until melted and smooth, 1 to 2 minutes. Set aside to cool slightly.

In a food processor, combine the almond flour, all-purpose flour, unsweetened cocoa powder, baking powder, and salt. Pulse 4 or 5 times to blend. Add the eggs, granulated sugar, and vanilla extract; pulse until incorporated. Add the mashed avocado and the melted chocolate; process until just blended, scraping down the sides as needed.

Transfer the batter to the prepared baking pan and spread evenly. Bake until a wooden pick inserted into the center comes out with moist crumbs attached, 20 to 25 minutes.

Let the brownies cool in the pan for at least 10 minutes. Then, using the parchment overhangs, lift the brownies out onto a cutting board. Cut into 16 squares.
