Select fresh fish with pink gills and clear eyes, and a sweet, floral smell. Scale and clean the fish, removing innards, then rinse thoroughly in cold water.

Cut the fish into serving-sized pieces if whole, or use fillets. Pat dry with paper towels and set aside.
