Let's Cook
-
Step 1.
Preheat the oven to 350°F. Grease and flour a 9x5-inch loaf pan or line with parchment paper.
-
Step 2.
In a medium bowl, whisk together 1 1/2 cups all-purpose flour, 1 teaspoon baking powder, and 1/2 teaspoon salt.
-
Step 3.
In a large bowl, cream together 1/2 cup unsalted butter (room temperature) and 1 cup granulated sugar until light and fluffy, about 3 minutes.
-
Step 4.
Beat in 2 large eggs (room temperature) one at a time, then stir in 1 teaspoon vanilla extract.
-
Step 5.
Gradually add the flour mixture to the butter mixture, alternating with 1/2 cup milk (room temperature), beginning and ending with flour. Mix until just combined.
-
Step 6.
Fold in 1/2 cup chopped nuts (optional) and 1/2 cup chocolate chips or dried fruit, if desired.
-
Step 7.
Pour the batter into the prepared loaf pan and spread evenly.
-
Step 8.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
