Step 1.
Heat half a litre of olive oil in an earthenware dish over a gentle flame. Add a few slices of garlic and a little chilli, and cook until fragrant, about 1-2 minutes.

Add four or five fillets of salted cod to the dish. Cook the cod gently until it is almost cooked through, about 5-7 minutes, turning once.

Step 3.
Remove the dish from the heat. Begin making circular motions with the dish to slowly emulsify the olive oil with the natural gelatine from the fish. Continue for about 5 minutes until a silky smooth white sauce forms, coating the fish like a hollandaise.
