Tomato-Poached MAHI Mahi: With Zucchini And Fresh Herbs

Prepare

- Mince 2 clove garlic
- 1 cup parsley, tarragon, basil, or chervil leaves, roughly chopped

Pat the mahi mahi fillets dry with paper towels and season both sides with kosher salt and freshly ground black pepper. Set aside.

Heat 2 tablespoons of extra-virgin olive oil in a 10-inch skillet over medium heat. Add the thinly sliced onion and cook, stirring occasionally, until soft, about 5 minutes.

Cover and cook, occasionally spooning the sauce over the fillets, until the fish flakes easily when pressed and is opaque throughout, 5 to 7 minutes. If the fillets are not mostly submerged, turn them over halfway through cooking.
